Sprinkles GF Chocolate Chip Cookie (Thanks to my wonderful husband!)
Austin came home on Saturday and surprised me with this AMAZING treat! He was listening last week when I said I really want to try the new gluten free chocolate chip cookie from Sprinkles. Such a sweet Valentines surprise! And let me tell you, Austin hates sweets! He just doesn’t have the taste buds for cookies, cake, ice cream, or really even most fruit. He just doesn’t like the taste! So for him to go stand in line at a cupcake place for me (which he said smelled horribly of icing ;)) I am so thankful! Best husband award. And let me tell you, these were the BEST cookies I’ve ever tasted. Soft, warm, gooey deliciousness. Definitely a treat to enjoy every now and then 🙂
Homemade Fajita Bowl
This was our “let’s cook at home” Saturday night/valentines dinner. We went to Whole Foods and picked up some of their grass fed flank steak and it was DELISH. He made the meat and I sautéed some bell peppers and onions. Austin made a big burrito and I made this yummy fajita bowl. I used some of the Trader Joes reduced guilt guacamole (my favorite) and tried a new bean dip from Better Bean Co. It was AMAZING. Paired with some salsa, a little low fat mozzarella and some white corn tortilla chips. Best combo ever.
Simple yet, delicious
This combo is a reoccurrence for me. I LOVE roasting brussels sprouts. Just drizzle with a little olive oil and sprinkle with sea salt and cracked pepper. Roast at 425 for about 20-25 minutes. I like them a little brown and crispy! YUM. I paired it with marinated grilled chicken and some salsa and Trader Joes reduced guilt guac (told you I love it!)
This is my twist on the burrito bowl from Chipotle. I have been adding more fish into my diet so here I used a 4oz flounder filet. I just cooked it on the stove with some seasonings. Then I combined 2oz of cauliflower rice with 1/2 cup Spanish rice (cut back on the carbs but add volume!) and then sautéed everything together with a little bit of low fat mozzarella. Place atop a bed of mixed greens with roasted red peppers and add some guac and salsa. Voila!
Wine + Rooftop fireplace
I LOVE the rooftop at our apartment. It’s so cozy with this electric fireplace. I love grabbing a blanket, glass of wine, and sitting up there on a Friday afternoon to kick the weekend off. I found this organic Chardonnay from Trader Joes. The guy at the store told me that organic wines don’t have the additives that other wines have, which often cause headaches. And he was right! Wine often gives me a headache and this one was GREAT!
