Are we halfway through the week already?! Here are some NEW yummy meals and treats I enjoyed this past week!

 

Pumpkin Protein Pancakes

These were DELISH. Packed with protein, gluten free, and just the right amount of flavor! I topped them with a little PB, a dollop of greek yogurt, and a drizzle of WF Maple Syrup. This is how I made them:

40g GF Kodiak cake mix, 1/3 scoop Cellucor vanilla whey, 1/2 tsp baking powder, dash of cinnamon, 40g pumpkin pure, 2 egg whites, a few drops of vanilla creme liquid stevia, and about 3-4 tbsp of unsweetened cashew milk. SO yummy!!

Cauliflower Rice “Burrito” Bowl

If you’ve never tried cauliflower rice before, you’re missing out! You can make it yourself by just throwing some cauliflower in a food processor OR Trader Joes sells it in their freezer section. All I did was sauté the cauliflower rice with some cracked pepper, sea salt, and spinach. I topped it off with grilled chicken, reduced guilt guacamole (also found at trader joes) and SALSA! Low carb yet filling!

Eat Me Guilt Free Blondie

These little blondies are the BOMB. With 160 calories, 5g fat, 7g carbs, and 22 PROTEIN. They are the perfect little pre or post workout treat! I heated mine up and topped it with a little PB2 and rainbow sprinkles!

Sweet Potato Hash Bowl

This is and always will be one of my FAVORITE meals/food combinations. This was after an intense workout and I was starving! About 150g sweet potato hash, sautéed spinach, 3oz grilled chicken, and 1 fried runny egg. YUM!

Miracle Brownies with Halo Top

I call these miracle brownies because the secret ingredient is BLACK BEANS. Can you believe it? I always thought these sounded gross until I tried this recipe. I cut mine into 12 servings and each serving is 109cal/3f/13c/6p AND 5g fiber!
