The season of outdoor family gatherings, pool parties, and cook-outs are upon us. Here are some healthy dishes & ideas of foods you can bring to share with everyone, but will also ensure you have a healthy option for yourself!

Simple Grilled Chicken

There’s nothing better than juicy, marinated, hot off the grill CHICKEN! Make your own marinade or just pick up one from the store! We like to buy a big pack of boneless, skinless chicken breast and then cut them in half (lengthwise) so that they will be thinner and cook faster. This will also ensure they don’t dry out! One of our favorite marinades, isn’t really a marinade but we use it as one!  It’s the Stubbs BBQ Green Chile Anytime Sauce. SO Delish!

Fresh Salad

A simple and easy side is a FRESH salad! It’s perfect for the summer temps and pairs perfectly with any protein. I love basically EVERYTHING on my salads. Use a mixed greens for the base and throw in tons of different toppings. Or you can bring all the toppings on the side and let everyone “create their own” salads! Toppings that I love: Cucumbers, cherry tomatoes, bell peppers, artichoke hearts, kalamata olives, feta, goat cheese, sunflower seeds, alfalfa sprouts, roasted veggies, etc.

Butternut squash pasta

This is another perfect side dish! Prepare before and reheat when you get there. This recipe has spiralized butternut squash, spinach, chicken, and goat cheese. However, you could also leave out the chicken and leave this as a veggie side. Find the recipe HERE.

Roasted Brussel Sprouts

These are seriously SO easy to make. Just cut the brussel sprouts in half, spray with coconut oil, and sprinkle with sea salt & pepper. Roast at 400 for 15-20min or until slightly brown and crispy. These can easily be made ahead of time, thrown in a casserole dish, and reheated before eating.

Enlightened Ice Cream

You can’t forget something for that sweet tooth! Let’s just assume there will probably be several high fat/calorie dessert options, so why not just be safe and bring your own lightened up version?! Grab one of these Enlightened pint size low fat ice creams. This Sea Salt Caramel is SO creamy & delicious!

Now you’re all set! Remember, failing to plan is planning to fail. Some people avoid certain social gatherings when they are trying to lose weight or working towards certain goals. That is NOT necessary! Just make sure you bring something with you that know you can eat & feel good about and share it with everyone! Okay, now let’s go have a COOK OUT!
