PB Chocolate chip cookies (with a special ingredient)

Studies have show that intake of coconut oil can help our bodies mount resistance to both viruses and bacteria that can cause illness. Even more, it also can help to fight off yeast, fungus and candida.

Coconut oil can also positively affect our hormones for thyroid and blood-sugar control. People who take coconut oil also tend to have improvements in how they handle blood sugar since coconut can help improve insulin use within the body.Image

Coconut oil can boost thyroid function helping to increase metabolism, energy and endurance. It increases digestion and helps to absorb fat-soluble vitamins.

Coconut fats have special fats called medium chain triglycerides (MCTs). It has been shown that breaking down these types of healthy fats in the liver leads to efficient burning of energy. “One 2009 study found that women who consumed 30 milliliters (about 2 tablespoons) of coconut oil daily for 12 weeks not only did not gain more weight, but actually had lowered amounts of abdominal fat, a type of fat that is difficult to lose, and contributes to more heart problems.”

I use coconut oil daily and discovered how amazing it is to use when cooking and even baking. The taste is great!

I have created this recipe as a healthy alternative to gooey chewy chocolate chip cookies. Try it out and let me know what you think!

Ingredients: coconut oil cookies

-2 Tbsp. coconut oil

-3 Tbsp. light brown sugar

-2 Tbsp. unsweetened vanilla almond milk

-2 cage free egg whites

-1 tsp. vanilla extract

-1/4 cup Better n Peanut Butter

-2 1/2 cups of rolled oats

-1 tsp. baking powder

-1/4 cup of mini chocolate chips (I used this dairy, nut, soy free kind )

Directions:

Pre-heat oven to 350 degrees. Soften the coconut oil by zapping it in the microwave. Then add the rest of the ingredients down to the peanut butter. Mix all together and then add the rolled oats and baking powder. Mix well and finish by adding the chocolate chips. Place in fridge for a few minutes and then roll the cookie dough into balls and place on an un-greased cookie sheet or baking stone. Place cookies in the oven for 10-12 minutes or until slightly brown. Let cool for a while because cookies will be moist and will easily fall apart. Enjoy! 😀
