I just LOVE this recipe. I’ve never been a huge fan of chili and don’t really like beans, so this recipe was a perfect fit for me. And, I love sweet potatoes! I promise, if you are not a huge fan of chili, give this recipe a shot! It is DELICIOUS. A true source of COMFORT FOOD.

Try this recipe out today, and then curl up with some blankets and feel the warmth. 🙂

 

Ingredients

  • 2 packages of Lean Ground Turkey (16 oz each)
  • 2 medium sweet potatoes, peeled and cubed
  • Sea salt, to taste
  • 10oz can of Rotel mild tomatoes and green chilies
  • 8oz can tomato sauce
  • 1 1/2 cup water
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • 1 bay leaf

Directions

In a large/deep saucepan, cook the ground turkey until brown and season with a sprinkle of sea salt and cumin.

Once meat is cooked thoroughly, add the rotel, sweet potatoes, tomato sauce, cumin, chili powder, and paprika. Mix together in saucepan, and then add the bayleaf on top.

Cover and cook on medium/low heat for 30-35 minutes or until sweet potatoes are soft. Remove the bay leaf and enjoy!
