You are going to jump for joy after trying THIS recipe. Gluten/Grain-free and Paleo approved! Moist and delicious pancakes just in time for fall!



2 cage free eggs

1/4 can pure pumpkin

4 drops of Sweet Leaf Vanilla Creme Stevia drops

1/2 tsp baking soda

1/2 tsp cinnamon

1 Tbsp coconut oil (melted)

1 banana



Beat together the eggs, pumpkin, and stevia. Then add the baking soda, cinnamon, coconut oil, and 1/2 of banana mashed. Mix together well and pour over hot skillet to make 6 small/medium pancakes.

Slice up the other half of the banana and place in skillet. Spray with coconut oil spray and sprinkle with cinnamon. After a couple minutes, remove from skillet.

Top pancakes with topping of your choice. Try out my homemade cinnamon vanilla almond butter. Spread over pancakes and top with cinnamon bananas.
