- 2 cups blanched almond flour (I use Bobs Red Mill)
- 1 tsp baking soda
- 1 Tbsp cinnamon
- 1 tsp pumpkin pie spice
- 1 cup pure pumpkin
- 2 eggs
- 2 egg whites
- 8 drops of Sweet Leaf Vanilla Creme Stevia drops
Preheat oven to 350 degrees F and line muffin tins with nonstick spray. I like this Coconut Oil Spray from Trader Joes
Mix together all dry ingredients
Add in wet ingredients and mix everything well
Evenly distribute mix into muffin tins. Makes approximately 12-14 muffins
Cook for 15-20 minutes, until toothpick comes out clean. Cool and Enjoy!
